Chicken Lollipop
Let's go for some Indo- Chinese today. Chicken lollopop (Drums of heaven) is a delicious appetizer that you can make out of chicken wings or drummettes. Its a little time taking process but trust me its taste is worth all that effort and you will end up licking your fingers.
Ingredients
For marination:
Chicken wings: 10-12
Ginger-Garlic paste: 1 1/2 teaspoons
Red chilli paste: 2 tablespoons (See Notes)
White pepper powder: 1/4 teaspoon
Soy sauce: 1/4 teaspoon
Sugar: 1/4 teaspoon
Salt to taste
Refined flour (maida): 1 1/2 tablespoons
Cornflour/ corn starch: 1 tablespoons
Egg: 1
Oil for deep-frying
For Sauce:
Ginger : 1/2 inch piece chopped fine.
Garlic: 2-3 chopped fine.
Chilly sauce Or Red chilly paste : 2 teaspoons
Soy Sauce: 2 teaspoons
Green chilly : 2-3 to taste chopped fine
Coriander leaves : to taste.
Method
First of all we need to make chicken wings look like a lollipop. Each chicken wings will give you 2 lollipops. One portion closer to shoulder and other towards outer part. Lets see how.
1. Cut the wing at the center with a sharp knife. Now we have two parts. In one piece, scrape the meat on all sides and hold the bone and squeeze the meat as far as possible without removing it from the bone completely and form a round shape. This is the piece towards the shoulder which got more meat which is easier one.
2. With the second piece, we have two bones just like our hands. Cut the meat part holding to the bone, and squeeze the meat just like we did with the first and remove the thinner bone out by twisting. So now we got both pieces ready.
3. Put all the lollipops in a bigger bowl for marination. Add ginger garlic paste, white pepper powder, salt, sugar, soy sauce and red chilli paste. Marinate thoroughly using hands and keep it in refrigerator for half an hour. Make sure the salt is on higher side because we need to add the flour in this later.
4. Once marinated mix it with maida, corn starch and egg. Now we can fry these lollipops.
5.Heat the oil in a big wok. Make sure the heat is not too high as this will cause the chicken not to cook from within and brown on the outside. No one will appreciate raw meat on their plate:)
6. Coat the pieces well with the marination and fry them in batches stirring continuously and turning the pieces in between. It will take 10-15 mins to cook. Drain the excess oil on to a paper towel and keep it aside.
7. Chicken lollipops are ready to enjoy. You can have it with some sauce or just by itself. its that tasty.
But I took it a little further and made my own sauce and added the lollipops in it which made it even more tastier. Lets see how.
8. In a non stick pan, add oil. Once oil is hot add ginger, garlic, chillies and saute for some time.
9. Then add the sauces and coriander leaves and cook it for 15 seconds.
10. Add in your lollipops and quickly toss it in sauce and remove from fire.
This is an excellent party dish and surely a crowd pleaser. Enjoy.
Notes:
1. Red chilly paste can be made at home if the store bought one is not in hand(Emergency situation !!). Lets see how. Pick up some red chillies preferably Kashmiri ones (for color and less spice) and soak it in warm water for half to an hour depending upon how much time you have on hand. Then snip off the stem, remove the seeds and put it in a blender and blend away. Make sure to use fresh water for grinding instead of the the water in which its been soaked, otherwise the paste will turn out to be too spicy.
2. The sauce that I have made is according to my liking. Be creative and change it to how you like and make your own sauce with adding other ingredients and spices.
3. We can also make some stuffing and stuff it in the lollipop which is been made from the part away from the shoulder which will take them to another level.
4.We can also crumb these lollipops by dipping it in bread crumbs instead of the marination.
5. For vegetarians, we can use the same marination and use paneer instead. It might not look like a lollipop but taste will be same.

Chilly Beef Fry
Its a lazy sunday and as usual me and my hubby were craving for some special Sunday dish. Its been a while since we had a beef dish so that was decided. After spending few minutes googling and watching you-tube videos we decided to cook "Chilly Beef Fry".
Required:
Beef: 1 Kg
Onions: 2-3 (Medium sized)
Green Chilly: 4-6
Ginger Garlic paster: 3 TBS
Soya Sauce: 2 TBS
Pepper powder: 3 TBS
Curry leafs
Steps:
1. Cut the beef in to small dices and put in a pressure cooker. Add 3 TBS of ginger garlic paste, 2 TBS of Soya sauce, 3 TBS of fresh pepper powder and mix well. Add little salt( since the Soya sauce is salty add less salt) Close the pressure cooker wait till you hear 3-4 steams. Once the pressure is gone open the lid and heat again so that the extra water (if any) evaporates.
2. In a pan pour 3 TBS of refined oil and add finely cut onions to it. Add the green chillies Sautate until the onions turns brown in color. Add the cooked beef to the pan and mix well
3. Add 2-3 TBS of chilly powder and mix well. Add few curry leaves
4. Cook for sometime until the disk becomes dry. Add salt as required.
5. You are done. :)
